1. The Core Equipment Every Cloud Kitchen Needs
Commercial Induction Cooker — ₹12,000 to ₹35,000 per unit
This is the centrepiece of every modern cloud kitchen. Forget LPG gas — induction is faster, safer, cheaper to run, and crucially, it works in non-FSSAI-compliant LPG locations where many cloud kitchens operate.
For a single-cuisine kitchen, two induction units (one 3.5kW and one 5kW Aeonic) are enough. For multi-cuisine, plan for 3-4 units. The timer function is non-negotiable — it lets one cook manage multiple orders in parallel.
Recommended: Aeonic PA-TCT-03 (3.5kW) and PA-TCT-05 (5kW) — both have timer, LED display and stainless steel housing.
Electric Deep Fryer — ₹6,500 to ₹18,000
Cloud kitchens running Indo-Chinese, fast food, biryani or snacks menus need at least one fryer. Buy a double-pan fryer (2×8L) — one for vegetarian, one for non-vegetarian. Single pan creates cross-contamination problems on aggregator platforms with veg/non-veg badging.

4. The Five Biggest Mistakes to Avoid
Mistake 1: Buying domestic-grade equipment. Domestic induction or fryers will fail within 6 months under cloud kitchen duty cycles. Commercial grade is 2-3x the price and lasts 5-10 years.
Mistake 2: Skipping the milk boiler. Beverage margins are 70-80%. If your menu has any chai/coffee, the insulated milk boiler pays for itself in 3 months.
Mistake 3: Single fryer for veg + non-veg. Zomato and Swiggy will flag you for cross-contamination. Always double pan for cloud kitchens.
Mistake 4: No hot holding equipment. Aggregator delivery takes 25-45 min. Without hot holding, food quality crashes and so do your ratings.
