Every kitchen cooks in batches and serves in a stream — and hot-holding equipment is what bridges the two. Get it wrong and the fryer output goes soggy under the wrong warmer, the dal skins over, and the coffee is lukewarm by the second round. Get it right and food cooked twenty minutes ago serves like it just left the pan. The right machine depends almost entirely on what you are holding, so this guide is organised by food, not by product line.

Start With What You Are Holding

Four questions sort the whole category. Is it fried food that must stay crisp? A liquid — coffee, tea, milk, soup? Curries and gravies waiting at a service counter? Or a full buffet line guests serve themselves from? Each answer points at different equipment, and most kitchens end up with two or three of these, not one.

Fried Food: Heat Lamp Food Warmers

Fried food is the holding problem most equipment gets wrong — cover it and it steams itself soft. The heat lamp food warmers on our table-top electrical page solve it from above instead: the single heat lamp unit (111412) keeps fried foods hot and crispy under one lamp, and the double heat lamp version (111411) spreads uniform heat across larger batches for a busier pass. Both come in stainless steel, rose gold and silver gold finishes, so the unit on an open pass can match the counter it sits on. Choose single or double by how much food your pass stages at once — a double lamp over a small output is wasted, a single lamp over a wide tray leaves cold edges.

Liquids: Warmer Plates, Soup Urns and Kettles

Liquids are the easiest food to hold and the most noticeable when held badly — nobody forgives lukewarm coffee. The range splits by container and counter:

Liquid warmer plates — single (111610) and double (111609) — keep coffee, tea and milk at ideal serving temperature in their own vessels on a flat warming surface. The double plate suits a counter running two pots at once.

Soup URN (111702) — a 7-litre urn, also in rose gold, for soup service at a buffet or counter.

Electric soup kettle — thermostat-controlled, in stainless and rose gold finishes. Capacity options vary; ask our team for what is currently in stock before planning around a size.

Hot/cold dispensers — for self-service stations, the electric models (111802 at 5L, 111803 at 10L) hold beverages hot on an 800W heater plate. The 9227HC (5L) does the same job with a fuel plate and no electricity — the outdoor-catering answer — and the 9227C (5L) is the cold-only version for juices and lassi on the same line.

The Service Counter: Bain Marie

For curries, gravies, rice and dal waiting between kitchen and plate, the Pradeep bain marie (111596) is the counter workhorse: uniform electric heating with precise temperature control across GN wells. Note that it is supplied without GN pans — the SS 304 pans (GN 1/1 and 1/2, in several depths) are bought separately, which is a feature, not a gap: you configure the wells to your menu, and spare pans mean a fresh batch swaps in from the kitchen in seconds. The bain marie belongs where staff plate the food; it is counter equipment, not display equipment.

The Buffet Line: Chafing and Induction Warmers

When guests serve themselves, holding becomes presentation too, and the equipment changes with it. The buffet range covers it: triply and round chafing dishes, the Aeonic PA-CW chaffer warmers (PA-CW-01 at 1.0 KW, PA-CW-02 at 2.5 KW) that sit under the triply chafers as their induction heat source, and the PA-BS-03 buffet station — a 930 × 530 mm, 3.5 KW induction surface for larger buffet formats. For venues without reliable power at every station, round chafers with a separate fuel device and the fuel-plate dispenser above keep a full line running with no sockets at all.

One honest note on temperatures: food-safety holding standards exist and matter, but the right thresholds for your operation depend on your menu and your FSSAI obligations — that is a conversation to have with your food-safety consultant, not a number to copy from a blog. What the equipment above gives you is the control to hold whatever standard you set.

Building the Full Line

Hot-holding is usually bought as part of a larger fit-out — the pass, the counter and the buffet each need their own answer. Our hotel kitchen setup guide walks the whole kitchen section by section, and the hotels page covers the equipment picture around the buffet. If you are specifying a new line, bring the menu: holding equipment chosen from the menu backwards almost always beats equipment chosen from a catalogue forwards.

Specifying a Service Counter or Pass?

Tell us what you serve and where it waits — pass, counter or buffet. We will match the holding equipment to the food, and you can see the bain marie, warmers and dispensers at our display centre before you decide.

Frequently Asked Questions

What is the difference between a bain marie and a chafing dish?

A bain marie is service-counter equipment: an electric unit holding GN pans with uniform heating and precise temperature control, sitting where staff plate food. A chafing dish is front-of-house buffet equipment guests serve themselves from. Many operations run both — bain marie at the counter, chafers on the buffet.

Should I buy a single or double heat lamp food warmer?

The single heat lamp unit (111412) keeps fried foods hot and crispy for a standard pass. The double heat lamp version (111411) gives uniform heat across larger batches — the right choice if your pass regularly stages more food than one lamp can cover evenly.

Does the bain marie come with GN pans?

No — the Pradeep bain marie (111596) is supplied without GN pans. SS 304 GN pans in 1/1 and 1/2 sizes and various depths are bought separately, which lets you configure the wells for your own menu.

Can I hold food hot without electricity?

Yes. The 9227HC dispenser holds hot with a fuel plate and needs no electricity, and round chafers work with a separate fuel or warming device — both suited to venues and outdoor catering where power points are scarce.
