Every cookware supplier in India will tell you their pots and pans are stainless steel. What they will not always tell you is which grade of stainless steel — because the grade makes all the difference, and the cheaper grade costs significantly less to manufacture.
This is one of the most important buying decisions a restaurant owner makes, and most make it without the information they need.
Two Numbers, Very Different Materials
SS304 and SS202 are both stainless steel alloys. They look identical to the naked eye. They feel similar in weight and finish. The difference is in their composition:
SS304: 18% chromium, 8-10% nickel. The nickel is critical — it provides corrosion resistance, non-reactivity with food acids, and long-term surface stability.
SS202: 17-19% chromium, 0-4% nickel. Manganese replaces nickel as a cost-reduction measure. Less corrosion resistant and more reactive with acidic foods.
The nickel content difference is the entire story. Higher nickel = better performance for commercial kitchen use.
Why This Matters Specifically for Indian Cooking
Indian cooking uses a higher proportion of acidic ingredients than most other cuisines. Tamarind, tomatoes, lemon juice, vinegar, kokum, amchur — these are everyday ingredients in South and Central Indian commercial cooking.
Acidic ingredients attack the chromium oxide layer that gives stainless steel its corrosion resistance. In SS304, the nickel content helps this layer maintain itself under acidic conditions. In SS202, the layer degrades faster.
The practical result:
- SS202 pots used daily for tamarind-based gravies start pitting within 12 to 18 months
- The pitting creates rough surfaces where bacteria can harbour
- The degrading surface can leach trace metals into food
- Rust spots begin appearing within 2 to 3 years in commercial use
SS304 used for the same purpose shows minimal degradation after 8 to 10 years.

How Suppliers Sell SS202 as SS304
This is a real problem in the Indian market. Unscrupulous suppliers label SS202 cookware as SS304 because they look identical and most buyers cannot verify the claim.
Three verification methods:
1. Magnet test: SS304 is essentially non-magnetic. SS202 is moderately magnetic. A strong magnet (not a fridge magnet — a neodymium magnet) held to the body of the pot — significant attraction suggests SS202 or lower grade.
2. Request mill certificate: The steel mill certificate shows the chemical composition of the steel used. A legitimate manufacturer can provide this. If a supplier refuses or cannot provide a mill certificate, treat the claim with scepticism.

Can I use SS202 cookware for non-acidic cooking?
For cooking that rarely uses acidic ingredients — steaming, boiling rice, plain water-based stocks — SS202 will last longer than in acidic cooking applications. However, for a commercial restaurant kitchen that uses the full range of Indian ingredients, SS304 is the only practical choice.
Does the magnet test always work?
It is a useful indicator but not definitive. Some SS304 grades can be weakly magnetic depending on manufacturing process (particularly at welds). A combination of the magnet test, requesting documentation, and buying from certified suppliers is the most reliable approach.
